 What I eat throughout my Saturday...

Breakfast <3


For breakfast, I love to start my day with a filling and nutritious meal. Since I usually wake up early and hungry, I'll shower and get dressed, then head straight to the kitchen to prepare my first meal of the day. I've been attempting to step out of my comfort zone with cooking, so I decided to make a chicken-bacon potato breakfast scramble. It's full of protein and carbs to keep me feeling full for the morning, and I always enjoy cooking by myself on the weekends! 




Ingredients: 

Potatoes, bacon, chicken
Kale, avocado, onion, mushrooms
Cheese, and ketchup (not shown)












Lunch <3

By the afternoon, I began to get hungry again and decide to be creative with my next recipe. I made the viral 'Anna Paul turkish pasta,' which was surprisingly easier to make than I had expected. I don't usually eat pasta (I ate way too much of it during quarantine and became sick of it), but I chose to step out of my comfort zone for the day. The pasta turned out to be sooooo delicious, and it was nice to make a meal that was outside my culture for a change.

Snack <3

My snack for the day was a simple strawberry banana smoothie with a LARGE scoop of vanilla ice cream and a half cup of oats! :) This is such a sweet yet healthy snack, so it's a win win for me.






Dinner <3

Dinners are always good and filling, especially if I plan to go out later on in the night. Since I consumed enough meat for the day, I thought it would be good to have some exquisite salmon to end off my night. The salmon with white rice and cucumber was refreshing yet energizing! As the Spanish saying goes, "barriga llena, corazón contento," which means "full belly, happy heart." 








Selfies with a Social Conscience

The concept of 'selfies with a social conscience' to me means to try to evoke a change or realization amongst people with something as simple as a photo. People always think that you have to do grand things to get a message out, but I believe that it is overlooked to be traditional and just make a simple post. 

Celebrities and influencers online are able to use their own photos to influence and entertain people while also integrating this into their normal lives. This is admirable as they are transparent which helps viewers to relate, empathize, and feel a range of emotions and hopefully gain something valuable from whichever ‘selfie’.


In my own post, I used pictures of food to possibly try to convey to people that it is possible to consume healthy options while still having fun with different food options. People usually associate tasty with unhealthy, but my photos are able to debunk this myth. While doing this, I feel more confident in my ability to produce meals because of the fact that I know I am bettering at least someone who chooses to be influenced by my healthy eating style.


Lastly, a sense of newfound confidence is gained with every post shared. There is something that is morally fulfilling about knowing that you are sharing a message that can truly help at least one person, or you could even be an inspiration to someone else. It’s amazing that people can make a difference or be influenced by the touch of their fingers, just by simply being online and soaking in useful content and information given.
